Summer is quickly slipping away, but you still have time to host (another) amazing backyard BBQ that will surely be enjoyed by your friends and family. A backyard BBQ is such a fun way to bond with your loved ones, and we’re all for it.

So, what do you need for an amazing summer BBQ?

  • Your trusty grill – May it be, gas, pellet, or a charcoal grill, cooking with your favourite grill makes a world of a difference. You get to achieve the best output when you’re familiar and at home with how your grill works.
  • Grilling tools – Make sure to have the following on-hand:
    • Skewers
    • Tongs
    • Thermometer
    • Silicone brush
    • Grill scraper

These are your essential grilling tools to achieve the perfect flavour and texture of anything you’re grilling.

  • Seasonal ingredients – Make the most out of the summer by using what’s abundant and in season. The fresher, the better! Make sure to include a range of vegetables and fruits you can experiment with when trying out new flavor combinations on the grill.
  • Recipes – It’s very easy to grill—especially when you have the right grill and tools—and it becomes even easier when you have your recipes within reach. You never know when you might forget the juice of one lemon or that pinch of Spanish paprika. So, before you host that summer BBQ, read up on your recipes and check your supplies to make sure you have the most flavorful grilled meats and veggies.

On that note, here are some of our new-found favorites which are perfect for summer backyard BBQs!

 

Spicy Pork Skewers

 

Classic pork skewers are basic yet ever wonderful for summer backyard BBQs. Yummy and easy to eat, you won’t notice you’ve had a few because they’re just that good!

  1. Freeze 2 lbs. of skinless pork shoulder for 45 minutes to an hour. Cut into 1−2-inch strips. Set aside.
  2. Grind 6 dried shiitake mushrooms and combine with half a red onion—thinly sliced, 12 coarsely chopped red Thai chilies, 8 cloves of coarsely chopped garlic, a half cup each of soy sauce and vinegar, ¼ cup sugar, and a tablespoon each of black peppercorns and salt. Shake all together in a Ziploc bag before marinating the pork in it for 6-8 hours.
  3. Prepare your grill; set to medium high heat. 
  4. Separate marinade from pork and boil it for a minute on a saucepan atop the grill, skimming as needed. Set aside.
  5. Skewer pork strips and lightly season with some salt and pepper.
  6. Cook on preheated grill for about 2 minutes per side, basting with your marinade until cooked through and brown all over.

Old Fashioned Potato Salad

 

Whether you eat them as they are or pair it with the grilled meats of your choice, you won’t go wrong with this old-fashioned potato salad recipe. It’s rich and it captures the flavors of summer!

  1. Bring a large pot of salted water to a boil and cook 5 potatoes until tender—about 15 minutes. Drain and peel when cool to touch. Chop into bite-sized chunks.
  2. Boil 3 eggs, let cool, peel, and roughly chop.
  3. Combine the potatoes and eggs with a cup of chopped celery, a half cup each of chopped onions and sweet pickle relish, ¼ cup mayonnaise, 1 tbsp garlic, ¼ tsp each of garlic salt and celery salt, and ground black pepper (to taste) in a bowl. Mix well.
  4. Refrigerate until nicely chilled. A steel bowl works wonders!

 

Brazilian Lemonade

Our wildcard for amazing summer backyard BBQs, we love this easy Brazilian lemonade.

  1. Wash and then slice 2 limes into 8 wedges.
  2. Place limes into a blender together with half a cup of sugar, 3 tbsp condensed milk, 3 cups of water, and some ice. 
  3. Pulse until all of the lime is fine and ice is in crushed consistency.
  4. Strain over a fine mesh pushing the juice through and separating the rind.
  5. Serve remaining mixture with fresh ice in your favorite glasses. Garnish with lime wedges for extra oomph.

The BEST Chicken Ever: Done 3 Ways

A dish’s flavour profile can change drastically depending on how it’s cooked. Even the most basic salt and pepper seasoning gain a different depth when it’s cooked over charcoal! With that said, you can elevate good old chicken and give it a flavorful twist by cooking it in a different method. We’ve selected some recipes for chicken done in 3 ways that you can try out for your summer BBQ.

 

Whole Smoked Chicken

Ingredients: 1 whole chicken

 3 L of water

½ cup Kosher salt

1 cup brown sugar

1 tsp minced garlic

Chicken rub seasoning 

1 yellow onion, quartered

3 garlic cloves

5 sprigs of thyme

1 halved lemon

 

Directions:

  1. Combine the sugar, water, and salt in a pot. This will serve as your brine in which you’ll submerge your chicken in overnight. Make sure the sugar and salt are completely dissolved. Weigh the chicken down if needed to make sure it’s submerged.
  2. When ready to cook, preheat your grill to 225℉—ideally set your grill to its smokiest setting. (Fires Alive has an assortment of BBQs in stock!)
  3. While the grill preheats, stuff the chicken with the garlic, onion, lemon, and thyme. Coat the outside with the chicken rub and tie the legs together when stuffed.
  4. Smoke the chicken until its internal temperature reaches 160℉.
  5. Rest for 15 minutes before carving—the temperature will rise to 165℉ as it rests. Enjoy the juiciest smokey chicken after!

 

BBQ Half Chicken with Alabama Sauce

 

Ingredients:

3-lb spring chicken

Chicken rub seasoning

¾ cup mayonnaise

1/8 cup lemon juice

¼ cup apple juice

1 tbsp garlic powder

1 tbsp horseradish

1 tbsp mustard powder

¼ tsp Kosher salt

½ tsp cayenne pepper powder

1 tbsp ground black pepper

 

Directions:

  1. Preheat your grill to 375℉ with a closed lid.
  2. Cut the chicken in half and tuck the wings in.
  3. Place the chicken on the grill, skin-side up and cook until internal temperature reaches 160℉.
  4. While the chicken is cooking, make your white sauce by whisking together the salt, cayenne, mustard powder, black pepper, horseradish, garlic powder, lemon juice, apple juice, apple cider vinegar, and mayonnaise.
  5. On a rimmed baking sheet, transfer the chicken and spoon over the white sauce before setting it on the grill grates. Close the grill and cook for 10 minutes.
  6. Let it rest for 10 minutes before carving. Enjoy!

 

Grilled Chicken Fajitas

 

Ingredients:

2 boneless chicken breasts

1 tbsp cumin

1 tbsp chili powder

Juice of 1 lime

1 tbsp olive oil

1 yellow onion, diced

1 green bell pepper, sliced

1 red bell pepper, sliced

Salt and pepper 

 

Directions:

  1. In a Ziploc bag, place the chicken with the cumin, lime juice, chili powder, salt, and pepper. Marinate in the refrigerator for at least an hour.
  2. Preheat the grill to 450℉. 
  3. Have a cast iron pan or fajita skillet on the grill grate and preheat for about 30 minutes. Oil the pan and place sliced bell peppers seasoned with salt and pepper.
  4. Lay chicken breasts on skillet and cook for about 10-15 minutes, flipping halfway through. Temperature should be at about 165℉.
  5. Let it rest before slicing, and assemble with peppers on a skewer.
  6. Serve as is or with tortillas and other toppings.

What you’ll need:

2/3 cup ketchup
1/3 cup apple cider vinegar

1 teaspoon garlic powder
1 teaspoon cumin
1 teaspoon sea salt
1 teaspoon black pepper

Directions:

What you’ll need:

1 cup ketchup

How to BBQ Right – The Ultimate Beginner’s Guide

Cooking meat over fire sounds easy, but some still find it challenging for a number of reasons.You shouldn’t have to feel overwhelmed when barbequing, and the preparation for it can be just as fun as enjoying the food you just made. This is why we’ve prepared the ultimate beginner’s guide for a BBQ done right. Keep just these 3 things in mind and you’ll be happily grilling in no time!

  1. Stick with the basics. The first step to avoiding that overwhelming feeling is to stick with some basic recipes first. The less complicated the prep time is, the less stressed you’ll feel too! Remember how some salt, pepper, rosemary, and thyme can go such a long way when it comes to delivering flavor. If you’re feeling a little more festive, barbequing marinated meats with some slices of bell peppers, onions, and lemon wedges is a great idea as well. Here’s an easy chicken breast recipe:
    1. Prep the marinade: Whisk together 1 clove of garlic, 2 tsps. honey, 2 tsps. Kosher salt, 1 tsp ground black pepper, 2 sprigs of thyme leaves, zest and juice from one lemon until the honey and salt dissolve. Slowly pour in half a cup of olive oil and whisk until emulsified and marinate for about 4 hours.
    2. Preheat your grill at 400F for 15 minutes.
    3. Insert the temperature probe into a chicken breast and cook until it reaches 165F internal temperature or about 15 minutes total for both sides.

Here are also some awesome recipes for a burger and veggie BBQ.

  1. Have the essential accessories. Before you start the fire, make sure you have everything you may need on-hand. The absolute grilling essentials:
    1. Tongs and spatulas – Have both within reach for flipping and turning your meats without ruining the charred “crust” that forms upon contact with the grill’s surface
    2. Skewers – Have some extras on standby too!
    3. Basting brush – For retouching your meats with some oil or marinade. 
    4. Fuel – May it be gas, coal, or whatever heat source you’re using, you’re going to want to make sure you won’t run out. Keep the extra gas safely away from the grill though! 
    5. Thermometer – Ideally one for external temperature scanning and one you can insert into the meat to read internal temperature which is important for a BBQ done right and when you’re going for a steak at varying levels of doneness.
    6. Timer – This works hand in hand with your thermometer. If a recipe calls for 3 minutes on each side for a medium done, 1-inch thick steak on a 71C preheated grill, you have to have a timer to tell you when it’s time to turn to achieve your perfect doneness.
    7. Scraper – Especially important when you’re grilling for a lot of people, this keeps your grill spotless and ready for your next batch of patties or steaks.
  2. The right type of grill – In (utmost important!) conjunction with the essential accessories above, the type of grill you use matters. We understand how overwhelming it is to find the right grill, so here are the top factors to consider when finding the right one for you: 
    1. Heat source – Do you prefer using gas, pellet, or charcoal? There are pros and cons to each type of grill and it will depend on how much and how often you’ll be grilling as well.     2. How many are you grilling for? This will also help determine the grill size you ought to get.
